Oven Baked Puffed Potatoes

This is an original side dish which consists of cutting potatoes in halves and rubbing them with salt before baking them in the oven.  Not only is it very easy to make, it is also completely fat free!

Preheat oven at 425F (220C).

Rub potatoes under water and pat them dry.

Cut each potato in halves lenghtwise.  Sprinkle cut sides with salt and rub them together.

Put potatoes on a baking sheet covered with aluminum paper.

Bake potatoes until cooked through and... puffed! :-)

For added flavor, you could also sprinkle some paprika or cayenne pepper.
